🥣 Irish Cabbage and Potato Soup (March)
Ingredients
1 Tbsp olive oil
1 ½ cups peeled and sliced carrots
1 cup sliced celery
½ head cabbage, chopped
2 russet potatoes, peeled and chopped
8 cups chicken bone broth
2 bay leaves
Salt, to taste
Chopped fresh parsley
Directions
Heat olive oil in a pot over medium heat. Add the carrots and celery to the pot and sauté for three minutes.
Add the cabbage to the pot and sauté for five minutes, until it begins to cook down. Stir in potatoes.
Pour in bone broth, add bay leaves, and increase heat to high. Bring up to a boil, reduce heat to medium, and let simmer for 15–18 minutes, or until potatoes are tender.
Season with sea salt to taste and serve topped with plenty of chopped fresh parsley.
🥘 Recipe: Injera (February)
Ingredients
2 cups teff flour
2 cups water
1/4 tsp active dry yeast
1/2 tsp salt
Directions
In a large bowl, mix the teff flour and water. Add the yeast and let it sit for 3–4 days to ferment (if you're short on time, use a sourdough starter or store-bought starter for faster fermentation).
Once the batter has fermented, it will have a slight tangy smell. Stir in the salt.
Heat a large, non-stick skillet over medium-high heat.
Pour a thin layer of the batter into the pan, swirling to create an even, circular shape. Cover and cook for 2–3 minutes until bubbles form on the surface, but the injera is cooked through.
Do not flip. Remove from the pan and let cool.
Enjoy with stews, lentils, or vegetables!
🥢 Cold Kimchi Noodles (January)
Ingredients
Main:
180g wheat noodles
1/2 cup aged kimchi (cut into bite-sized pieces)
85g cucumber
Bibim Sauce:
2 Tbsp gochujang
1 Tbsp rice vinegar
1 Tbsp honey
1 Tbsp raw sugar
1 Tbsp sesame oil
Instructions
Boil a pot of water.
Place wheat noodles in and cook thoroughly.
Drain water and rinse with cold running water for one minute. Drain excess water.
Mix BIBIM Sauce ingredients to create noodle sauce.
Mix sauce, kimchi, and noodles in a large mixing bowl.
Place cucumber on top of noodles.
Optional: Add boiled egg!
